I have a new favorite Japanese food, kokichi ouma. The process of preparing the dish is simple, and the result is light, tasty, and delectable.
I grew up eating this dish at every meal on my birthday. Every birthday. My mom would make it for me, and I loved it. But I haven’t had it since my birthday, and I’m not sure why. Maybe my palate is just not as sensitive to the flavors. Or maybe I just forgot.
Its probably both. But my dad loves the dish. And I don’t really know why.
kokichi ouma is often described as “a type of rice porridge made with a mixture of sakura, rice, and barley”. In Japanese it is most commonly used as a side dish to rice or as a stuffing for meat, fish, or poultry. It is usually eaten with fish or fish broth.
The dish itself is very simple and easy to make. Just rinse the rice and soak it overnight. In the morning, combine it with a cup of water (or add a little of your favorite broth) and simmer it until the rice is tender. You can take it out of the pot when it is done using a slotted spoon, or it can be reheated in the microwave.
A few decades ago when my parents were growing up, rice and barley were called “kokichi” because it was considered a very good rice and barley. Today it is still used as a side dish but is mostly used as a stuffing for meat, fish, or poultry. The dish itself is very simple and easy to make. Just rinse the rice and soak it overnight.
We’re going to be using kokichi ouma, or kokichi curry as it is known in Japan, often called in English as stir-fried rice. It’s a kind of stir-fried rice that is usually served with fish, seafood, or meat. When it’s stir-fried, the rice is first cooked in a soy sauce, sugar, and oil, and then stir-fried for five to seven minutes.
It’s made with a sweet soy sauce flavored with fish, like fish sauce. It’s stir-fried with other seasonings like garlic, shallots, ginger, and so forth, and then left to soak in water overnight. It has a very sweet and spicy flavor, but it’s also very mild and easy to eat.
Kokichi ouma is a popular Japanese dish that you can find at restaurants and supermarkets. It often contains fish, seafood, or meat (usually seafood), which are combined with sweet soy sauce, sugar, and a few spices. It’s made by stirring the three ingredients together with a wooden spoon for about 10 to 15 seconds. It often contains other ingredients too, like a bit of fish sauce, soy sauce, shoyu, sugar, and so forth.
